The raw material (beef, pork, poultry, fish, produce) is conveyed to the perforated drum by a flexible and highly wear-resistant polyurethane crusher belt. Uniformly increased pressure forces the soft meat through the perforations into the drum, while the larger and firmer parts (sinews, cartilage, bones, peels, etc.) are held back on the outside of the drum and removed by scrapers. The meat’s natural fibre structure is retained, since the meat is merely briefly strained under low pressure and low temp, but not grated, ground or heated in any way.
SEPAmatic® in the AMR Process Line
The SEPAmatic® line of equipment is the final step of the Advanced Meat Recovery (AMR) process. After the presizing of bone material in the Presizer and the removal for the largest meat particles in the Bone Cannon, the SEPAmatic® further removes hard particle from the finely textured meat by pressing the product through a stainless steel drum with perforated holes. The remaining product is free from bone chip, cartilage, or sinew and ready for further processing.
